Origin & Identity – What’s Behind Dassai?

Dassai is produced by Asahi Shuzō Co., Ltd., a brewery in Yamaguchi Prefecture, western Japan, founded in 1948. From June 2025, the company will officially be called “Dassai Inc.” and is internationally recognized as an ambassador of Japanese premium sake.

The name “Dassai” is symbolic: it roughly means “Otter Festival.” It derives from an old regional saying, where otters would display their caught fish as if for a feast – a metaphor for joy, abundance, and enjoyment that perfectly matches the brand’s philosophy.


The Roots: Asahi Shuzō and the Birth of Dassai

🏯 A small brewery facing a big challenge

When Hiroshi Sakurai took over Asahi Shuzō in 1984 as the third-generation head, the company was economically weak and faced the question: how to survive in a shrinking sake market? At that time, sake consumption in Japan was declining, and many small breweries struggled to survive.

Sakurai chose a radical strategic shift: instead of producing “ordinary” sake, he focused on a premium product, designed deliberately at the highest level of sake craftsmanship: Junmai Daiginjō – pure rice sake with extremely polished rice grains.


The Breakthrough: Junmai Daiginjō as a Prestige Product

The first Dassai releases appeared around 1990, quickly proving to be something special: sake with elegant aromatics, clear structure, and taste harmony surpassing many traditional products.

  • Yamada Nishiki rice: The brewery exclusively uses this legendary variety, known as the “king of sake rice,” ideal for the finest Daiginjō styles.
  • High polishing ratio: By polishing the rice grains to well below 50%, unwanted flavors are removed, creating an exceptionally delicate, aromatic profile.
  • Craft methods: Even with modern production tools, Dassai preserves artisanal techniques, such as careful koji management and fermentation control.

This uncompromising focus on premium quality was key to its later success – setting Dassai apart from many other sake producers.

In September 2023, Dassai opened its first sake brewery outside Japan: the Dassai Blue Sake Brewery in Hyde Park, New York, USA. Here, sake is produced reflecting local conditions and international taste preferences – using Yamada Nishiki rice, partly grown locally, and creative approaches to flavor balance.

From June 2025, the brewery’s name will officially change to “Dassai Inc.” to clarify the brand’s global positioning. Further international activities are planned, such as a restaurant in Paris and sponsorship of major events.
