When people are asked what sake is, the answer usually comes quickly: "Rice wine."

The term is widely used, but strictly speaking, it is not entirely accurate. From a brewing perspective, sake actually has more in common with beer than with wine—even though that may sound surprising at first.

To understand why, it helps to take a closer look at how sake is made and what makes its brewing process truly unique in the world.


🌏 A Tradition Recognized as World Heritage

In Japan, sake is far more than just a beverage. Its production is based on knowledge and craftsmanship that have been passed down from generation to generation for centuries.

This cultural significance was also recognized internationally: in 2024, the traditional knowledge and techniques of Japanese sake brewing were inscribed by UNESCO as an Intangible Cultural Heritage of Humanity.

In doing so, UNESCO honors not only sake itself, but above all the collaboration between rice farmers, koji specialists, and master brewers, whose combined expertise brings this remarkable drink to life.


🍚 The Foundation: Not All Rice Is the Same

Sake is made from special varieties of rice known as sakamai. These differ significantly from ordinary table rice. Typical characteristics of sake rice include:

  • Larger rice grains
  • A clearly defined starchy core (shinpaku)
  • Lower levels of proteins and fats

Why does this matter? Proteins and fats can produce unwanted flavors during fermentation. That is why the production of premium sake begins with one of its most important steps:

👉 Rice polishing.


⚪ Rice Polishing – The First Step Towards Quality

During the process known as rice polishing (seimai), the outer layers of each rice grain are carefully removed. This eliminates much of the fats, proteins, and minerals, leaving primarily the starchy core, which is essential for fermentation. The rice polishing ratio (seimai buai) indicates how much of the original grain remains after polishing.

Examples:

  • 70% → Simpler styles of sake
  • 60% → Ginjo sake
  • 50% or less → Daiginjo sake

In other words, for a Daiginjo sake, more than half of each rice grain has been polished away. This meticulous process alone can take up to 48 hours.


🔬 Koji – The Key to Sake Brewing

This is where sake differs most significantly from wine. Grapes naturally contain sugar, which can be fermented directly. Rice, however, consists primarily of starch, which must first be converted into sugar before fermentation can begin.

This crucial task is carried out by a unique microorganism:

🦠 Koji (Aspergillus oryzae)

The koji mold produces enzymes that:

  • Convert starch into sugar
  • Create the foundation for the fermentation process

This step is so important that many sake breweries say:

"The quality of a sake is decided in the koji room."


🍺 Why Sake Is Technologically Closer to Beer

This is where the comparison with beer becomes particularly interesting.

In beer brewing, the process works like this:

  • The starch in the grain is converted into sugar during malting and mashing.
  • Yeast then ferments this sugar into alcohol.

Sake follows a similar principle—but with one crucial difference. In sake brewing, both processes take place at the same time:

  • Koji continuously converts starch into sugar.
  • Yeast simultaneously ferments that sugar into alcohol.

This unique process is called:

⚗️ Multiple Parallel Fermentation

It is considered one of the world's most efficient fermentation methods and allows sake to naturally reach an alcohol content of 15–20%—without any distillation.


🧑🌾 The Master Brewer – The Toji

In traditional sake breweries, the Toji plays a central role. A Toji is not only the master brewer but also a fermentation expert and quality manager.

Historically, Toji belonged to specialized guilds of master brewers, where knowledge and craftsmanship were passed down from generation to generation. Throughout the brewing season, they carefully oversee:

  • Temperature control
  • Fermentation
  • Aroma development
  • Koji production

Sake brewing is therefore far more than a technical process—it is a craft shaped by experience, precision, and tradition.


🌡️ Warm or Chilled? A Common Misconception

Many people associate sake with being served hot. This is largely because the sake exported in the past was often of simpler quality. Heating it helped soften or mask rougher flavors.

Today, however, the general rule is:

  • Premium sake is usually enjoyed chilled or at room temperature.
  • Different serving temperatures can highlight different aromas and flavor characteristics.

Typical serving temperatures:

❄️ 5–10°C → Fruity and refreshing
🌡️ Room temperature → Well-balanced and harmonious
🔥 Gently warmed → Softer, rounder, and fuller-bodied


🌍 A Category of Its Own?

Personally, I see sake as a category of its own—but that's something everyone should discover for themselves.
